We call them...

Snickerdoodle Mini Muffins!:)

Yesterday Adam and I both stayed home because of the icky weather. We took that time to have a hump day relaxation day. We woke up and finally got out of bed around 1PM, then made our way downstairs to put a pot roast on to cook, followed by making some mini muffins. The recipe was for cinnamon muffins, but I kinda tweaked it a little. Once they were all cooled, these little two bite delicious treats, tasted like nothing other than Snickerdooles. Here is the recipe, though I'm sure if you are not lucky enough to have a mini muffin pan, a regular one would work just GREAT!

Snickerdoodle Mini Muffins:

1 1/2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice ( I didn't use)
1 heaping teaspoon cinnamon
1 egg, lightly beaten
1/2 cup skim milk
1/3 cup margarine, melted
TOPPING:
I just eyeballed this.
2 Tablespoons melted butter
cinnamon
sugar

In a large bowl, combine flour, sugar, baking powder, salt, nutmeg and allspice and cinnamon. Combine the egg, milk and margarine; mix well. Stir into dry ingredients just until moistened. Spoon into greased or paper-lined mini muffin cups. Bake at 400degrees F for 12-14 minutes( Mine were like 10 min) or until muffins test done. For topping, combine sugar and cinnamon. Brush the tops of warm muffins with margarine; sprinkle with cinnamon-sugar.

These were so easy, and will probably be a staple around our house. They were great for breakfast, and dessert:)

Homemade

Well, there are two reasons I love Sunday's today. 1) Chocolate Chip Coconut Bread pudding. 2) Homemade Ginger Ale. I know what you are thinking, Ginger Ale? Yes, Adam is a huge fan of Alton Brown, and we watched him make it so we decided today was a good day to make it. So we'll see, though we won't get to drink if for 2 days because the yeast has to create carbonation!!!

Nothing much else going on this weekend. Friday and Saturday were a little iffy, because I was still not feeling 100%, but today I am! Friday when I got home from work Adam was playing Halo, but since I was home, he stopped pretty quickly. We made dinner, Italian Chicken and Broccoli ( I really should start a food blog, since all we do is cook) and watched some of our many recorded shows. Saturday, we got up and went to Circuit City, since they are going under, in hopes of finding a cord for the computer, which we had sucess, had some Panera for lunch then headed home.

Adam went to play poker, he is very excited because for once in his college career, someone has actually managed to put together a weekly game. I would have gone, but again, didn't feel well! Maybe next week. I watched We are Marshall. Which I thought was going to be like Remember the Titans, until everyone died, then I remembered. Silly Me!

So nothing much happening here. And there probably won't be until Adam goes to Bangladesh, so sorry for the boring updates!:)

Near Tragedy!


So as previously mentioned Adam and I wanted to try out our new Pasta Roller on the Kitchen aid. So as we were doing so, it got a little out of control and almost died. We were for sure that the motor was busted on my less than two year old, now discontinued plum(Purple) mixer. It would have been very sad. But lo and behold, it worked just fine this morning. It just needed a little rest! Thank Goodness!:)

Oh yes, and I also got my 100% Organic Cotton Jeans from GAP last night! They are a great color and so soft, but of course are about 10 inches too long. Being short is a problem sometimes!:)

Not much happening here.

That just about sums up the last week. We haven't been up to much, just hanging out! Let's see. I started work last week. Its a lot of filing, oh boy! But it'll get me through April probably, so that's good! Adam started school last Wednesday. He picked his studio, and then he had class on Thursday. It looks like he will be going to Bangladesh over spring break, so our trip home to look at houses is being delayed, to when? I don't know!

Saturday, Adam, David and I went out to King of Prussia mall to wander around. We bought the pasta roller attachment for our Kitchen aid Mixer, which we are going to put to use tonight! Sunday, we watched a lot of football. Monday, MLK day, Adam had class off, but I still had to go to work:(

If I was smart I would have stayed home from work. 20% chance of snow flurries turned into about 3 inches of snow, and a TWO hour car ride home. The ride is usually only about 30-40 min! It was no fun. I stayed home Tuesday due to a sore throat and terrible headache. Adam doesn't have class on Tuesday's so he was there to watch to Inauguration with me. Wednesday I came home to a home made pizza, dough and everything. It was GREAT! YUMMY!!!

Snow? I don't think so...

Well they lied again. Yesterday they were predicting like 4 inches of snow here... we didn't even get trace amounts. What a let down! Oh well, I guess some things never change.

Adam and I went to see the orthopedist on Thursday, everything with his should looks good, they gave him a new brace thing that kinda looks like a backpack of sorts, he likes it a lot better because he can straighten his arm. We were happy that there would be no need for surgery! Thursday night, Leslie and David came over to watch the National Championship football game, seeing that David went to Florida, there was a lot of tension in the house, though he required we root for the gators and not OU, which I was going to anyway! We had food, and a good game, and for the Gator's win, everyone was happy!

I start work tomorrow:( Boo... I have no idea what I'm going to be doing, it's at the same place I've been, but it's full time, for a few months at least! So that's good, it'll take my mind off of things like putting the house up for sale, though there are some things we need to do to get ready for that! Oh well! Not much going on here, Adam and I are going to make our way out to the grocery store here in a little while!

Hello 2009, Good-Bye 2008


While, 2008 was a GREAT year, I can tell that 2009 is going to be the best yet, even though it hasn't started out too great for Adam and I. ( We've both been sick with the stomach flu). 2009 wow, I remember when I thought that 2003 would never make it! We rang in the new year in Connecticut, at The Mohegan Sun Casino. Couldn't have been more perfect for Adam right? The day started out in Vermont, where we woke up to what many, even in the northeast would call a blizzard. To bad it didn't happen earlier, we probably wouldn't have a broken bone in the family! Once we woke up, because the snow was coming down so fast, we rushed to get out of there, seeing we were staying on the top of a mountain, and had to get down! Just to let you know, there was probably only about 2 inches of snow the night before. The snow was coming down so fast, that by the time Pete wiped the windshield and moved to the other side, the previous was covered again! It was crazy, and like I said, a few days late. We finally made it down the mountain and we were on our way to Connecticut. I just loved the bright yellow sign in this picture!!!

We finally made it to the hotel just in time to shower, and change for dinner. We were eating at a restaurant in the Casino called Tuscany, a Todd English restaurant. It was really good food, and of course FAR to much of it! So after dinner, the parents went to a concert, and us kids hit the tables. For once, Blackjack was kind to Adam and me. We won about $120! After we gave Adam's mom her investment of 100 back! We were a great investment for her! The casino was beautiful, though very different from any in Vegas, or even AC.

Nothing much happened that night, we ate, drank and gambled, is there a better end to a year? The next day we spent at Pete's side of the families house, with good food and more wine. I consumed so much wine over that break, I think I should lay off for a while! So finally, on Friday Jan 2, we made our way home to bail our dogs out of jail, and man were they happy!


The day!

With being in beautiful Vermont for several days, we finally made it to the slopes! It wasn't very long before we realized that we are Colorado skiers, not Northeast US skiers! Once we purchased lift tickets, snapped on our skies, and buttoned up our coats, we were on our way to to lift line. Which, luckily, there was only a little line for. On the way up, I noticed, that the skier and boarders below were producing a not very friendly noise on their way down.:) Let me give you a little background on my skiing expertise.

I went a few times when I was really little, and absolutely loved it. I mean, my sister and I would fly down the run, aiming for any little bump that we called " Moguls" on the way down. With being so young we had very little thought of hurting ourselves. Flash forward to Freshman year of college, my first ski trip with the Fenner's. At first I was not scared, but the faster I went the more it hurt! So then the thoughts started flowing. " I'm going to tear my ACL, I'm going to run into a tree and hit my head, I'm going to break my body" Needless to say, skiing wasn't as much fun when I realized how badly you can hurt yourself!

So back to Vermont. Once up at the top of the mountain, we just took a run. We had no map, no nothing. It was the worst skiing of my life. It was solid ice, with little patches of man made snow. So I basically went down the slope sideways and VERY slowly.We quickly learned, the first run we took was a green, now I usually don't do them, but it was the ONLY way down! Finally, probably an hour later I made it to the bottom! About half way down, I decided that that was the only run I would be doing, because it was really scary and it hurt really badly! But Adam and his dad decided they would stay and do a few more runs ( the ladies slow them down BIG TIME). So with Adam being excited to finally be boarding, his mom, uncle and I head to the car!

A few hours later I'm woken up, by my husband, from a nap. And he reviles to me, his arm. It was hanging in a sling, and he looks a little drugged up. Low and behold, he BROKE his collar bone. Now all I had to say was a least it wasn't his shoulder or a bigger bone!:) Always positive! So that evening, while everyone else went out to dinner, I stayed home to nurse my hubby. He was pretty useless. Because of course his right arm was the one injured, because who ever breaks a bone in their non-dominate hand?

What? A heat wave?

As most who read this know, Adam and I spent most of his Christmas break in Vermont, " Skiing". It was quite unfortunate that when we got there, December 26th, after a long 6 hour drive there, there was a "heat wave". It was 40 something degrees, with the next two days going to the 50s. Needless to say, there would be no skiing those days. Sadly, the town we were in, West Dover, is VERY tiny so there wasn't anything to do but play games!!! We had games of Apple to Apple ( a word game ) and train ( Domino game ) going on all during the day. Though I was not having fun because I kept getting huge numbers! I was trying to look mad, but I just look kinda silly!




I was glad to finally be done with train, I think I had the worst score by like 100 points! But oh well, it was good fun, family time!



The next day we decided to go and see a movie. Well wouldn't you know, there was ACTUALLY a movie theater in little West Dover. But it only had three theaters, that's right. One was showing Benjamin Button which we had seen on Christmas Day, and Marley and Me ( Way to sad to watch ) and last was Bedtime Stories. It was so cute, a GREAT family movie, and great for kids! But the theater was tiny. We took a picture to give you the idea! Adam's comment was " Isn't our TV this big?" It was sad but pretty close to true!










Soon, it was time to ski!:) Sorta!

Great start?

Well we made it back from skiing, mostly in one piece. We only got to ski one day and of course that one day was just awful! It was like skiing on an ice skating rink! Well with the horrible slopes, it was bound to happen. Adam broke his collar bone! He is doing much better now though, and we'll know more when we got to the doctor tomorrow.

As for me, I was doing fine until last night, where I came down with a nasty case of food poisoning! I wouldn't wish food poisoning on my worst enemy, it's awful! So once we both start feeling better, we'll do a much better update!
