We call them...

Snickerdoodle Mini Muffins!:)

Yesterday Adam and I both stayed home because of the icky weather. We took that time to have a hump day relaxation day. We woke up and finally got out of bed around 1PM, then made our way downstairs to put a pot roast on to cook, followed by making some mini muffins. The recipe was for cinnamon muffins, but I kinda tweaked it a little. Once they were all cooled, these little two bite delicious treats, tasted like nothing other than Snickerdooles. Here is the recipe, though I'm sure if you are not lucky enough to have a mini muffin pan, a regular one would work just GREAT!

Snickerdoodle Mini Muffins:

1 1/2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice ( I didn't use)
1 heaping teaspoon cinnamon
1 egg, lightly beaten
1/2 cup skim milk
1/3 cup margarine, melted
TOPPING:
I just eyeballed this.
2 Tablespoons melted butter
cinnamon
sugar

In a large bowl, combine flour, sugar, baking powder, salt, nutmeg and allspice and cinnamon. Combine the egg, milk and margarine; mix well. Stir into dry ingredients just until moistened. Spoon into greased or paper-lined mini muffin cups. Bake at 400degrees F for 12-14 minutes( Mine were like 10 min) or until muffins test done. For topping, combine sugar and cinnamon. Brush the tops of warm muffins with margarine; sprinkle with cinnamon-sugar.

These were so easy, and will probably be a staple around our house. They were great for breakfast, and dessert:)
