Come out, come out!

When we were in Santa Fe, so many people told me that they read my blog. This was such news to me! As Adam said..." I think there are more people who read it than you think, you might want to start checking your spelling!!" So, this post is for all you lurkers. Please comment and let me know you are reading. Maybe... just MAYBE, I will post more interesting stuff for you if I know you are out there.

I am just really curious who stumbles upon my blog. I know I am a crazy blog stalker lady, who just keeps clicking links of blogs on my friends pages! I won't judge I promise! Heck, maybe I don't know you have a blog and would love to read it!:)

The Cowgirl and baked potato

Because I JUST put away our suitcase from Santa Fe this morning, it reminded me I never did the second post of the second day of our vacation! So here it is...

Sunday, those who didn't have to leave first thing in the morning; Adam and me, Andy, Stacie and Mike, went and did a little Santa Fe Square wondering. Finding a place to eat proved harder than one would have thought. Our original lunch destination was closed. So we found another recommended place, .8 walking miles away, got there and wouldn't you know it, closed too. So we stumbled upon this little place called the Cowgirl ( which actually had ended up being recommended on Kacie and Tom's wedding website!) They had a little band outside, playing some folk music, there was a nice breeze, and a host with the best muffin top ever.;) We had a great time sitting and enjoying each other company, the band, and eating Mexican food for the umpteenth time!

I of course had to get dessert when I found out they had a " famous ice cream baked potato. I think I had seen them before because I kind of had an idea what was going to come out. But it was fun to order non the less. It certainly wasn't anything spectacular, but it was fun to eat!


After lunch we headed down to the Santa Fe Square and parted ways with Stacie and Andy:( Mike Adam and I continued to look around. I was hoping to snag some Christmas presents for people, but I didn't want to have to check our bag, so we didn't buy anything. So much for getting ahead of the game! So to the airport we headed... 5 hour early! Adam wanted to watch GOLF!!!

Our plane ended up being an hour late, for whatever reason, so we didn't make it home until 11:30, but we were both exhausted, seeing as we had been at the airport for FOREVER. Adam just had to watch the rest of the US Open, so I had the idea to watch it in the airport. Good Idea Lindsay. I guess it WAS Father's day after all.

REUNITED

AND IT FEELS SO GOOD!!!!




This past weekend, we took a mini-cation to Santa Fe, New Mexico. It was for a wedding of two friends from college. Tom and Kacie. I'll be honest, it was also a little reunion, but I suppose that is what weddings are. Among our group of friends there had been two other wedding. Sadly, we couldn't attend either. One was in December right when my mom and sister came to PA for Christmas in 07, and the other was the past December right after we had Dylan. So this was the first time in about 3 years we have seen any of these guys. It was fantastic.

The location was beautiful. It was kinda out in the middle of no where dessert, off a gravel road, but let me tell you, the sunset was amazing On the way home though, I was waiting for a coyote or roadrunner to step out and stare me down, as if daring me to hit it. Didn't happen though.



One thing that I was reminded of during this wedding was why my husband and I DO NOT DANCE. Not that anyone else was fantastic or anything, but we are REALLY bad dancers. Adam like to grunt if you will... a little of the " UGGGHHH" thrown in. And well, I really just did some p90x moves to be funny. A little running lunge, and some wacky jacks. That way I couldn't feel bad about not working out!!



I think everyone had a great time catching up,I mean come on, there were SPARKLERS, and doing a little reminiscing. Sadly it was a pretty short reunion, as many of us were only able to be there for the weekend.

Fever Fighter

There is just some reason that I think that titles that include alliteration are cute. Don't ask why. I know I do it all the time, but this time it's true. For the first time in his six and a half month life, my little man was sick. Don't ask me how he got it, though the pool was the only place he went last week, but he got a virus.

Thursday night I noticed he was a little hot, so decided to take his temperature. 99.6. I figured it was just teething, because well, I have thought that for the last 3 months! All he does is drool and chew on stuff! So that night before going to bed I went to say goodnight, and he was still a little hot. I took his temperature AGAIN, it was 100.7. Going up, " I'll call the pedi in the morning if he still has it." I said. Adam gets up with him that morning, such enough, 101.4. I call, ask at which point we need to bring him in. They had an appointment for that afternoon, so at 1:30 we headed there. Where we learned his temperature was 103. Kinda high if you ask me. Checked for all the usuals. No ear infection. No cold. No knowing. They ran blood work, a urine sample ( Though he knew he wouldn't have a uti, since that's more common in uncircumcised boys, and VERY rare in circumcised. ) So he left us with giving Tylenol every 4 hours, and calling it a virus.

Of course, this was the DAY before we were going to be leaving him home with his Grandma and Aunt while we went on a little mini cation. As our pedi told us..." No matter how old they are, kids always manage to ruin vacations" Now I don't believe that, and he urged us to go ahead and go, which we did. Well, wouldn't you know, Little Dylan managed to live through it. We came home to a happy baby. EVEN if he welcomed us home with a 3 AM SCREAM fest. Can anyone say growth spurt?

Be Jealous.. or not!

Saturday night, Adam and I had a meal to me jealous of. Cheeseburgers and Onion rings. Alright, maybe only a child would be jealous but let me tell you. These were amazing. Maybe it's that I hadn't had a beef burger in a while ( I've been trying to eat turkey burgers, but this was just delicious. Adam made a chipolte ketchup. While he was grilling the burgers, I was in charge of onion rings.

After a year under the counter, we FINALLY broke out our deep fryer. Out of sight out of mind. If it's out we MUST fry everything. But for onion rings we broke it out. I used Bobby Flay's recipe ( kinda) for these rings. I say kinda because I just kinda eye balled everything, didn't really measure out the ingredients to batter them with. Who actually measures them? They turned out great though. I recommend everything give them a try!
I actually did the shake and bake method, but I'm writing it from the cookbook so. But I put the flour for the last dredge into a brown bag and shook it. Worked well.



Buttermilk Onion Rings
(Adapted from our signed Bobby Flays Burgers, Fries and Shakes)
2 Large Vidalia or other sweet onions ( We used one white onion)
1 Quart Peanut oil ( We used the ol' Cool Daddy Fryer.)
2 Cups buttermilk ( Used what was left in the container we had)
Salt
4 Cups of all- purpose flour
1/2 teaspoon cayenne pepper


1 Peel the onions and slice them crosswise into 1 inch thick slices, separate each slice

2. Heat oil to 375 degrees. Line a baking sheet with paper towels and set aside.

3. While oil is heating, but the buttermilk in a large baking dish and season liberally with salt and pepper. Divided the flour between 2 large baking dishes and season each dish liberally with salt and pepper and the cayenne.

4. Working in batches, dredge some of the onion rings in one dish of the flour. Tap of excess.Dip rings into the buttermilk, allow the excess to drain off, then dredge in the last flour dish. Then fry the rings, flipping ones. Remove when slightly brown, and sprinkle with salt. Serve hot.

Big Trouble

The title sums it up. We are in BIG TROUBLE. Dylan can't even walk, or crawl and he already keeps us on our toes. He may not be able to crawl, though he is trying really hard, but he can roll with the best of them. If he wants something say like, computer charger cords, or WII controllers, or cords for the cable box, he'll just roll on over and put them in his mouth. The days of laying him on the floor and cleaning the kitchen are O-V-E-R.

What really spurred this post was this morning. Dylan has been sleeping in his crib since 2 months. So that is 4 months. He's never once tried to get out of... yet. We have only a few times had to go and move him away from the bumper with fear of suffocation. This morning was something I had NEVER seen, heard of, or expected.

HE WAS UNDER THE SHEET. THE FITTED SHEET.

I kid you not. My kiddo managed to work himself under the fitted sheet, and wrap it back around himself. He's a magician. I still don't understand. It baffles me. I have NO IDEA, how he managed this. Needless to say Mommy will be changing that sheet tonight!

The nest thing is, his desire to roll on the changing mat. He had figured out how to do it. The contour will keep him on his back no longer.
We are in BIG TROUBLE.

X-Treme!

Still on the wagon. Kind of. Yes we are still doing P90x. Yes, it gets easier. Yes, I've seen results. Yes, I'll still continue to do it after my first 90 days are up. Did that cover it?


We had been doing really good working out. Until the end of April of course. It's kinda been hard to get out of the, being lazy funk, since then. Too much to do. But we still try. We usually have been having two or 3 OFF days. OR days where I don't want to do what it says to do, so I just do the cardio. But hey, at least I'm doing something. I wanna lose weight, not be a body builder, ya know. Overall, I think I've lost 10 inches. Probably more than most would, because when I started I had just stopped nursing. I've lost 10 pounds also. Sadly, I still have about 20 I would LIKE to lose (putting me at a weight I haven't been in about 7 years!;)) so I guess I've REALLY gotta stop eating ice cream and drinking margaritas!

Wishing...and hoping!

I am pretty sure that everyone on the planet wishes that they could do something that they can't. Mine? Well, I have a lot. Every time I watch SYTYCD, or American Idol, I wish that I could sing and dance. I really wish that I was GREAT at one thing. I was alright at soccer, I made ok grades, but really hated school, and I most DEFINITELY can't sing OR dance.

What made me think of this you ask? WICKED. Last Tuesday night Adam and I went to see WICKED, at the Dallas Summer Musicals. I had heard of it of course, but didn't really know much about it. But let me tell you what... A - FREAKING- MAZING. How fun would that job be? Dancing and singing all the time, with a fun group of people. ( I often think about this while watching GLEE also) Know I know, it's almost impossible to become a Broadway star, but how amazing would it be. The woman who played, Elfaba, the wicked witch of the West, was Phenomenal. Amazing. I can't say enough about it. Glinda, in my opinion, was a little shrill for my taste. ( What did you think Court?) And the guy, well he was was alright. Not as good as Finn or Puck on GLEE!

That's what I wish I could do. What do you wish you could do really well but can't?

Recommendations?

I need help my bloggy friends. I am trying to find a book to read. I have officially depleated my stash. I am a simple reader. I like chic lit, I won't lie! I don't like to have to think when I am recreationally reading! I read to many books in High school that required thinking. Some books that I've read latley , just to give you an idea of what I read, The Last Song, Dear John, the 9th book of the Sookie Stackhouse series, The Art of Racing in the Rain ( DOG LOVERS, I HIGHLY RECOMMEND.) I think that's about it. Any recommendations?

Half Year

HOLY CROW... My baby boy is a half a year old, six months, oh Lord, where has the time gone? It was such a FAST month, and I'm pretty sure that next week he will be getting married, if time keeps going like it is. Everyday is a new adventure with him now, as he is learning so much. It's fascinating to watch him learn. He'll look at something then figure out what to do with it. AMAZING I tell you. He is still the most handsome baby there ever was also! So what has he been up to this month?

6 Month Stats:
14 pounds 7 ounces ( 10th percentile)
26 inches long ( 50th percentile) I wonder who's body style he is going to have??
Still in size 2 diapers
Wearing 3-6 month clothes, though some 0-3 still fit him. Like his " Month" picture white one!.

He has had lots of foods, green beans,yellow squash, sweet potato, carrots, peaches, apples, pear, avocado, I think that's it. He likes all of them. LOVES veggies, we'll see if he still likes them in a few months!

Sleeping pretty well, though his wake up time has gotten to be about 8, which is really early for us!:)
You take probably about 2 naps a day. Some that are about 3.5 hours long!
you eat 4, 6 oz bottles, and eat 2 oz of food at night.

SCREAMING... it's his new favorite thing. HE will be screaming at the top of his lungs, I look over and he smiles. He figured out that it was him making that noise, now he loves it. ( I have a video, but Adam's computer has a virus so I can't load it!)
" BOBOBOBOBOBO" that's his new talking sound. Adam and I are pretty sure he said "hamburger" at the pedi office today!
He loves to laugh. He laughs when we give him kisses on the neck, when he is naked before a bath, doing the baby clock dance, and bouncing. It's infectious I tell you!

He is a joy to have around, thought this month is going to bring a HUGE milestone for mommy and daddy. We are going to be leaving him over night. We are going to a wedding of some college friends in New Mexico, and will be leaving baby behind. It's only 1 night, but two full days. I'm pretty sure that it's going to be so much harder for ME than him. He will be in good hands with my sister, and her girlfriend, as well as a little time with grandma and grandpa!
